Breakfast Burritos

INGREDIENTS

6 Whole wheat tortillas ( you can also use low carb or gluten free option)

3 Mediums size sweet potatoes 

1 Can black beans rinsed and drained

1/4 tsp cumin

1/4 tsp chilli powder

Pinch of salt and pepper to taste 

6 Large eggs 

1 Avocado sliced 

1/2 Cup cheese of choice or ricotta cheese for less calories 

1/3 Cup enchilada sauce 

DIRECTIONS 

Bake sweet potato in oven on 200 degrees fan forced for 40 mins . Once sweet potato is cooked place in bowl and mash with a fork, then set aside.

In a separate bowl , add black beans , cumin powder, chilli flakes , salt and pepper. Stir till all combined and set aside .

In a medium sized bowl beats the eggs together. Spray a fry pan and cook eggs over a medium heat , folding every minutes to get the eggs nice and fluffy. Once cooked remove from heat.

To assemble burritos , make sure you have warmed the tortillas. You can warm them in the microwave for 20 secs before assembling. Lay out warm tortillas , spread sweet mashed potato on each. Evenly add scrambled eggs, avocado , black beans, and cheese of choice on each tortilla. Then drizzle a tablespoon of enchilda sauce on each. Tuck in the ends and roll up the burritos.

Place on a baking sheet in oven on 150 degrees fan forced for 5-10 mins
